Zucchini: Vegetable or Fruit?

Who doesn’t like zucchini? We love it! But the truth is that there are a lot of people that just don’t like this particular summer squash. It is low in calories (only 33 calories per medium zucchini) chock full of antioxidants, vitamins, minerals, and fiber as well as a favorable amount of potassium, folate, and vitamin A. You can saute it, bake it, steam it, stuff it, eat it raw, stir-fry with it and put it in a soup, serve it as a side dish, make zucchini bread. There are so many creative ways to use this healthy vegetable (botanically it is called a fruit, betcha didn’t know that!)
